Vegan Chestnut Ice Cream

No, the winter hasn’t ended. And Yes, this is an ice cream. But some recipes just can’t wait till summer. And some chocolate recipes can easily put a smile on our face like this one 😉
Before giving you the recipe (only 3 ingredients!), let me tell you how much I love chestnuts. This love for chestnuts, which has been lasting for more than 2 years already (when I first discovered them) will certainly be a long one. My favourite way of eating them is baked in oven with some salt, but they have also become one of my favourite adds in desserts. Last year, around the same period I posted some chestnut pudding recipes, this year I tried chestnut puree in an ice cream and the result was a creamy and delicious dessert for the chestnut-chocolate lovers and not only.
Serves: 6-8
425 ml unsweetened chestnut puree (1 can)
200 (raw) dark chocolate, melted
200 ml coconut milk (1/2 can)

Optional:
2TbSp carob syrup/your favorite sweetener in case you prefer it sweeter.

Mix these ingredients until you obtain a homogenous cream. Pour the base into your ice cream maker and follow the instructions of your ice-maker machine(or put it in the freezer for some hours and then mix it again using a blender).

    Interesanta reteta. trebuie sa caut si eu acest puree de castane, nu am mancat niciodata :(, banuiesc ca e super bun 🙂

      Gabi, piureul de castane nu are un gust foarte foarte bun dupa mine, decat daca esti fan castane, dar este foarte versatil si merge pus la multe. Aici se gaseste si piure indulcit( dar care mi se pare f f dulce) si castane fierte la aburi( care sunt delicioase), dar il poti face si acasa, desi e ceva de munca la el.

    Oh my! I love chestnuts but I can’t find unsweetened chestnut puree…:( But it’s a wonderful idea to mix it it coconut milk…

    Nooo, you’re not gonna tell me you first ate chestnuts 2 years ago???
    I adore them, cooked in water on the stove, or baked on the grill (that’s how you can find them here at street’s vendors), doesn’t matter, I like them any way. But I noticed I am not that much fond of chestnut puree.
    However, this recipe sounds delicious, it’s pity that we’re finished with chestnuts for this year.
    (I keep telling myself not to read your posts late at night, and I keep doing it, because I can never resist your cover photo)

    Mmmm, îmi plac castanele şi fierte şi coapte de cînd eram copil. Din cînd în cînd cumpăr castane şi-mi fac pofta, e o idee bună să încerc să adaug în înghetată.

    Ce idee buna! Am un pachet de piure de castane in congelator de ceva vreme. Mie imi plac coapte, nici eu nu prea sunt fan piure de castane, dar cu ciocolata suna interesant. O sa fac chiar maine! Te anunt! 🙂

    Sounds divine! I looove chestnuts (and chocolate, but who doesn’t?)!
    Unfortunately, I don’t own an ice cream maker and can never get a nice consistency (even though I’ve tried several techniques found on the net). Still a wonderful recipe!
